The Aromas de Picual Project’s main aim is the research, production and sale of top quality extra virgin olive oil, using the Picual olive variety, which has the largest productive surface area in the world.
Aromas de Picual was one family’s initiative, the Melgarejo family, who has been involved in olive groves and the production of olive oil since 1780, with the help of three extra virgin olive oil enthusiasts with a deep understanding of this variety, trained in the sensory aspects at the University of Jaén.
These three people provide an important, gratifying aspect for education and the University: a professor and researcher in the olive oil sector, with more than 30 years experience with the variety and its production; and two of his students that have decided to realize his knowledge to obtain unique `Picual´ variety oils. This project unites tradition, knowledge, research and innovation, and especially a strong passion, forging this product: Picual olive extra virgin olive oil.
All of their knowledge and tradition is focused on achieving their aim; from the growth of the oil in the fruit, the development and ripening of the olive, until reaching the critical maturity and proper production with the maximum care, regulating all of the process´ variables, in function with the knowledge derived from research, in order to obtain unique and different oils with special sensory tones, all within the typical characteristics of the Picual variety olive.
This involves the new 21st century Picual olives, which join the extraordinary intrinsic characteristics of the variety with some sensory attributes, resulting from the control and regulation of the process, providing very complex oils along with strong harmony and persistence.
The Aromas de Picual project is a passionate endeavor of people within the sector having dedicated their whole lives to oil research and innovation, keeping the variety’s unique characteristics, providing different sensory aspects, searching for complex tones and attributes, harmony and some sensations that provide the client a true joy to the palette.
